Simple Homemade Chicken Pho

This recipe definitely isn't traditional by any means, but it is simple, quick, and delicious.  You can personalize it according to your own tastes.  I chose a chicken-based soup with simple veggies and flavors but get as creative as you want!

Homemade Chicken Pho


You will need: 

  • broth (I used chicken broth)
  • rice noodles
  • protein (I used chicken) 
  • onions
  • garlic
  • cilantro
  • seasonings of choice
  • lime

Directions: 

  1. Cook your protein and prepare your rice noodles according to package instructions. 
  2. Bring 2 cups of broth and 1 cup of water to a simmer. 
  3. Add sliced onions, garlic, and seasonings and simmer until veggies are tender.  I used garlic powder, onion powder, and pepper.  
  4. Add the cooked chicken and rice noodles to the broth and simmer for another minute.
  5. Remove from heat, serve in a bowl, and top with chopped cilantro and lime.
  6. Optional: add a bit of soy sauce or fish sauce for extra flavor!
