Simple Homemade Chicken Pho
This recipe definitely isn't traditional by any means, but it is simple, quick, and delicious. You can personalize it according to your own tastes. I chose a chicken-based soup with simple veggies and flavors but get as creative as you want!
Homemade Chicken Pho
You will need:
- broth (I used chicken broth)
- rice noodles
- protein (I used chicken)
- onions
- garlic
- cilantro
- seasonings of choice
- lime
Directions:
- Cook your protein and prepare your rice noodles according to package instructions.
- Bring 2 cups of broth and 1 cup of water to a simmer.
- Add sliced onions, garlic, and seasonings and simmer until veggies are tender. I used garlic powder, onion powder, and pepper.
- Add the cooked chicken and rice noodles to the broth and simmer for another minute.
- Remove from heat, serve in a bowl, and top with chopped cilantro and lime.
- Optional: add a bit of soy sauce or fish sauce for extra flavor!
